White modeling chocolate recipe variations?
Dark modeling chocolate requires cocoa solids of 70 % or higher, so what's the white chocolate equivalant? Any particular brand of white chocolate to be used? If white choc doesn't have cocoa solids... Tried with regular oteker cooking choc but it went greasy & unuseable. I use two tablespoons of liquid glucose with dark choc so thought maybe reducing this to one tbsp?? Help Xx

Strawberries dipped in chocolate recipe?
So I wanted to make strawberries dipped im chocolate for my class. but everytime I buy the chocolate that u need for that I follow the instructions good & the chocolate ALWAYS gets burned Even when I make it homemade What am I doing wrong? I would buy some already made at the store but they're like $2 for each straberry which is a rip off. Is there any good recipes to make strawberries dipped in chocolate?& also can u tell me what I should do so I won't burn the chocolate? I need a recipe for about 30 people Im guessing. Thank you

I'm making cupcakes for a friend's birthday, and I'm going to top the cupcakes with hardened chocolates M's her name is maddie . I was wondering if I should just melt chocolate and pour it to look like M's or use ganache or something. What do you think?
